Avocado instead of butter

Some while ago when we returned home from Chiang Dao north of Chiang Mai we stopped by some road stands to buy avocado and other fruits. As long as the fruit orchards are not part of deforestation of national parks or encroached land, this is a much better way of supporting the hilltribes than buying orchids stolen from the forest.

Mark Bleadon, who founded the Chiang Mai Gardeners Bulletin Board many years ago, explained that he uses avocado as a substitute for butter. That seemed very exciting and next breakfast I replaced the melting butter with half an avocado for the two toasts, topping with gorgonzola cheese. The result was excellent in both taste and appearance (the shades of green matched each other). I can now long for this combination, and while writing this I feel hungry again.

    For dinner last night I ate one big Avacado with the juice of a whole Lemon, five little Bissin wholewheat crackers and a glass of Mont Clair cask wine with ice.

    Doubt that I could have replaced the Avacado with Butter and survived.
