Why would anybody buy wasp nests?

Wasp nests are sometimes seen in the markets of southern China and northern and northeastern Thailand. The other day I had a bowl of potato chips topped with a piece of a quickly grilled wasp nest. Khun Densak, the head gardener, had harvested a wasp nest at Dokmai Garden and he wanted me to try it. The larvae had a nice smoked taste, reminding me of certain smoked fish. The larvae were better than the pupae, as the pupae were a bit more firm in texture. Ketsanee Seehamongkol assured me that if one does not quickly put the wasp nest on the grid of the grill, the larvae will have no taste.
